Cotherstone belongs to the family of cheese we call Dales Cheeses. These are lactic, fresh, crumbly cheeses that were made around the hills and valleys of the Pennines, often on quite remote, isolated farms. Due to the isolation, these cheeses were originally intended to feed the farmer, rather than for sale at the local markets and as such tend not to be clothbound or matured for a long time. The texture is moist, succulent and crumbling while the flavours are reminiscent of sour cream or yoghurt with a fresh acidity and delicately savoury, yeasty notes alongside.
