A small cylinder of cheese with a greyish dusting of vegetable ash, coated over with white, blue or green moulds, Dorstone has a mousse-like fluffy texture with a lemony, zesty and slightly vegetabley flavour. When making Dorstone, the curd is manoeuvered into large plastic mesh sacks that look like large pillow cases and left to drain before the moulds are filled. This creates the fluffy texture in the finished cheese.
