Washed Rind Cows Milk Cheese

Traditional Animal Rennet

Unpasteurised Cows Milk

Plump pink discs of cheese with a slightly frosted look due to subsequent slight growth of white moulds. There are many different flavours in a mouthful of this cheese. The paste is fruity, a little peppery and meaty but with a cool note, which can be a little like fresh almonds. The rind adds an animally, leathery flavour.
