DESCRIPTION:
Kevin and Alison Blunt make 3 goats cheeses on their farm in Sussex using the milk of their own herd of goats. Golden Cross is the first cheese they made and was originally called Du Satre after its original maker, Regis Du Satre. We used to buy the cheese when Regis made it, and when he retired and sold the recipe to the Blunts, continued to buy it under the name Golden Cross. The recipe for Golden Cross calls for a very long set, up to 24 hours, which results is very delicate curd. However the matured cheese with its delicately floral flavours is worth the effort. This cheese really comes into its own when warmed to room temperature.
