Made by Giana Ferguson at Gubbeen House, near Schull, Co Cork, Ireland
TYPE OF CHEESE:
Washed Rind Cows Milk Cheese
RENNET:
Traditional Animal Rennet
MILK:
Pasteurised Cows Milk
DESCRIPTION:
Of all the washed-rinds we sell, Gubbeen is the mellowest, capturing the characteristic smokiness of a washed rind without concealing the light, fresh flavours of the milk. It has a semi-soft paste with a silky-smooth, pliable texture. It tastes milky, fresh and buttery. The rind has an uneven, fuzzy surface that is peachy-pink when young and becomes darker orange-brown as it gets older.
