There is a distinctively farmyardy, meaty aroma and flavour to Milleens but within that bracket it can be smoky, mild and meaty or perfumed, floral and minerally or downright punchy. Its texture can vary from smooth breakdown to a combination of creamy-curdy centre with a liquid layer surrounding it. Milleens are small pinky-orange rinded disks, originally made by Veronica Steele and now in the capable hands of her son Quinlan.
