Shropshire Blue was invented by a cheshire cheese grader called Dennis Biggins in the 1920s. It is essentially orange Stilton. Having said that, we think that the Shropshire Blue from Colston Bassett is the best in the UK and although not as deep-flavoured and complex as their Stilton, it's pleasingly creamy without too much blueing. We do not sell Shropshire Blue in our shops but do wholesale and export it.
