Yarg was first made in 1983 at Netherton Farm in Cornwall and named after the original cheesemaker Mr Gray (Yarg is his name spelled backwards). Current owners the Mead family became involved a little later. The dairy is now near the Meades farm at Pengreep. The Meads and Dane have worked on a recipe of cheese specially for Neal's Yard Dairy with traditional animal rennet which has a deeper and richer flavour than their vegetarian rennet cheeses. The exterior of this cheese is coated in nettles over which moulds are allowed to grow lending a minerally, spinach-like flavour to the rind. Its texture is smooth and creamy-firm while the flavours are gentle and lactic but rich.
