These are log shaped cheeses with a wrinkled blue-green rind and a white interior. The texture is usually quite dense and creamy with a more liquid breakdown under the rind. The flavours are lactic and tangy but with nutty undertones. To arrive at the current Innes Log, we have worked with Stella for a couple of years taking a cheese she already made and still makes, called Bosworth Ash, but asking her to try it with kid rennet and without adding the penicillium camemberti which encourages a thick fluffy white rind. We receive Innes Log quite young and rindless into our stores so that they can grow blue and green moulds without spreading them all over Stella's white-rinded Bosworth Ash.
