Shepherds Crook is a disc-shaped cheese very similar in appearance to its sibling cheese Little Ryding. It also has a largely white rind speckled with creamy, rusty red and greyish brown moulds. Little Ryding and Shepherds Crook share a similar recipe but the curd for Shepherd’s Crook is ladled into a different shaped mould. Due to its different shape, the moisture drains differently and the mature cheese has a slightly different flavour and texture as a result. Flavours similarly range from lactic and gentle to more animally and creamy but Shepherds Crook is taller than Little Ryding and tends to retain more of its firm and more acidic heart.
