In Britain, Neal’s Yard Dairy is one of only a handful of companies that act as both cheesemongers and cheese maturers. In addition to storing and selling cheese, we also grade it and offer feedback to cheesemakers. In many instances, we take the cheese at a young age and mature it according to our own instincts, experience and knowledge. Here, we talk to our hard cheese maturer Gareth to explore his approach to the delicate interplay between art and science that is cheese maturation.
