This recipe harks back to more traditional Wensleydale-making methods. Its texture is less crumbly and its flavour more buttery than many examples of Wensleydale more widely available today.

Made with pasteurised cow's milk and animal rennet.

The Wensleydale Creamery sources its milk from small local farms and provides work to over two hundred residents of the surrounding area. In 2013, the company was awarded Protected Geographical Indication status for the name ‘Yorkshire Wensleydale’, recognising and protecting its important link with Yorkshire.

Our work with this cheese

We have been selling Hawes Wensleydale for over 20 years. The cheeses we buy are made to a less acidic recipe which results in a softer, more complex tasting cheese. At Hawes this cheese is referred to as Kit Calvert 'Old-Style' Wensleydale cheese.
