Leicestershire is one of the three counties in which Stilton cheese originated, and Sparkenhoe Blue continues this tradition. Cheesemaker Will Clarke has been making this cheese since late 2017.
Our work with this cheese
Rather than use the same room to make all of their cheeses, the Clarkes built a separate dairy and maturing rooms to house their blue cheese project. They also use the same annatto that makes their Red Leicester orange to make a Shropshire Blue version of the cheese.
