This goat's cheese with a bloomy, natural rind has a white, chalky paste with fresh lemony flavours; more mature cheeses will have some delicate breakdown bringing a vegetal earthiness. 

Made with pasteurised goat's milk and vegetarian coagulant.

Our work with this cheese

Historically, we have sold the cheeses quite young – at about 4-6 weeks – although we are currently experimenting with a longer age profile. In which case we will re-wrap the cheeses on arrival and move them to a cold maturing space for the paste to break down, yielding a combination of textures. This cold but humid environment allows a breakdown beneath the rind to occur and a deepening of Ticklemore’s characteristically crisp flavours.
