Variability and Selection in British Farmhouse Cheese

In this tasting Jamie will lead you on a journey to the farm, guiding you through the selection process Neal’s Yard Dairy undertakes to obtain the best of British farmhouse cheese. Showcasing the variability within a selection of cheeses, he will discuss the profiles that Neal’s Yard Dairy looks for and selects in each cheese.

This tasting will provide an in-depth glance into batch selection, an integral part of our work which ensures the cheeses we sell in the shop, online, to wholesale customers and around the world are of a profile we are proud to deliver. Jamie will also give an insight into the maturation process that takes place in our arches in Bermondsey, discussing how this has a further impact on each cheese once it has left the farm. He will highlight some of the recipes made exclusively for Neal’s Yard Dairy which show fundamental differences to the regular make, explaining why these differences are beneficial. Alongside this, tastings will also be provided of seasonal pressed apple juice, perrys and ciders, all produced either by Jamie himself or his neighbours on farms in Herefordshire.

This class will be hosted in the Tasting Room above our Borough Market shop. It is designed to serve as a light meal. Jamie will present 6-8 cheeses in a tasting wheel with bread, crackers and accompaniments. There will be samples of 2 to 3 ciders or Pomona to provide an introduction to pairing cheese with these beverages. As alcohol is served, all attendees must be over 18 years of age. Attendees will be offered a 10% discount code valid for one month on cheese purchases made in our shop or online.

Jamie started working in cheese 8 years ago, selling Marcel Petit Comté in Borough Market. He was blown away by the quality and diversity in one cheese. However, there was always this shop in Borough Market that dwarfed him........Neal's Yard Dairy. After 2 years working with one affineur in the Jura and one cheese, he decided it was time to make a break and approached Neal's Yard Dairy. He started part-time mongering for a year whilst pursuing other interests until cheese overcame him and he realised it was his life! And here he is today, taking care of domestic retail wholesale and what we glamourously call 'Rest of the World', meaning anything that's not Europe or America.
