Cheese of the Month Tasting - 13/5/21

Each month we choose four cheeses that we think are tasting particularly good. We like to feature cheeses that are in season, as well as batches of cheese that are tasting especially delicious in a particular month. Frequently we have limited quantities of new or experimental cheeses which we introduce to our customers through this selection. This makes the selection a good choice if you want to keep up to date with the latest developments in British cheese making.

The texture of this soft sheep’s milk cheese is moussy, light and fluffy, often with a silky breakdown at the rind. Flavours are delicate and bright with a warm finish reminiscent of fresh cream.

**This cheese intentionally has a very thin mould rind. Because of this, wild moulds- spots of blue, green and grey moulds, often develop on the surface during maturation.These are especially noticeable at present. They are perfectly safe to eat and do not negatively affect the flavour of the cheese. **

A semi-soft washed rind cheese boasting a medley of savoury, nutty and fungal flavours and a bouncy, pliant texture with a pleasing bite at its pink rind.
