The September Selection
“Three amazing cheeses, from three amazing cheesemakers, very diverse in flavour and culinary use, brilliant, absolutely brillant” Jamie Oliver
The core of this cheese presents a crumbly curd with a clean, fresh flavour and a pleasant mineral tang. The breakdown under the rind is creamy and milky whilst the rind gives the cheese its earthy character.
Made with raw cow's milk and animal rennet.
Keen's Cheddar tends to have a dense, rich and creamy texture. It has layers of flavour that range from savoury and mustardy to juicy and bright with a pleasantly sharp acidity.
Made with raw cow's milk and animal rennet. Clothbound with lard.
With its orange-pink rind, Ogleshield has a gentle but complex flavour: it can be deeply savoury, almost reminiscent of chicken broth and has a sweet and milky aroma. It has a soft and pliant texture and melts beautifully; a perfect cooking cheese.
Made with pasteurised cow's milk and animal rennet.
Sheridan’s crackers are produced in Dumanway, a small town in West Cork. The production process is very simple, the dough is mixed, then rolled, then cut by hand. It is then baked in an oven, then packed ready to be eaten with some delicious cheese!
The minimum weight of the September selection of cheeses and crackers is 1190g.
