We buy Parmigiano-Reggiano San Pietro from the Cravero family a fifth generation cheese maturer based in Bra, Piedmont. Giorgio Cravero visits us twice a year and we visit Bra biannually for the Slow Food Cheese festival that takes place in September. Giorgio's passion is infectious; he loves to share the message that the Parmigiano-Reggiano he sells is not a commodity cheese. The cheese that he matures is of extraordinary quality. The Libbras family who make it still operate at a farmhouse level, making only six cheeses per day.
