Au Fil du Temps

A remarkable wine from Jean-Luc and Isabelle of Jolly Ferriol in Roussillon. This is a traditional rancio wine –made with Macabeau and Carignan the wine is put into glass demijohns and left outside in the sun and elements for 6 months. After this they put it in barrels that contain a bit of the same wine from previous vintages – a mini solera! This is in many ways reminiscent of a dry Sherry or Marsala wine but as it is not fortified feels perhaps even more nutty and oxidative. Walnuts on the nose with a raisiny but dry, bitter almond finish on the palate. Hugely complex, this is a wine that makes you want to keep on smelling and tasting.

Jean-Luc and Isabelle bought Mas Ferriol in Espira d’Agly in 2005 – it had been abandoned for 50 years. The Mas itself was built around 350 years ago and comprises of 25 ha in total (not all vines). After the war various different farmers farmed the land but Jean-Luc and Isabelle brought the vines back under the control of the Mas and converted them to organic viticulture. These vines grow on soil that is made up of schist and marl and are buffeted by the regions prevailing wind, the Tramontane, which blows from the Pyrenees.
