Old Ford's texture ranges from silky to weathered; craggy and crystalline depending on age. Young flavours are floral, and almost coco-nutty becoming progressively more savoury, briny, and concentrated with age.

Made with raw goat's milk and animal rennet.

Mary sadly passed away earlier this year. Unlike her other cheeses, Mary Holbrook liked to make each batch of Old Ford herself. We don't yet know whether her team will make Old Ford going forward.

Our work with this cheese

Old Ford was made when the seasonal milk production peaks, usually between May and July.  The cheeses arrived with us a few months later and are turned once a week until they are sold.

This short 'farm-visit' film features cheesemaker Mary Holbrook at her farm near Bath in Somerset. Mary has her own herd of around a hundred home-bred goats, or 'the league of nations' as she calls them. As we follow her around the farm, the true depth of her knowledge and experience reveals itself. We hope you enjoy watching it.
