Corra Linn is a clothbound sheep’s milk cheese made by Selina Cairns. Its make and format are similar to a small rustic Cheddar, though when tasted, its smooth texture and fruity flavour immediately betray its difference.
Our work with this cheese
We select batches of Corra Linn in Scotland once or twice a year. We tend to go for batches with a smooth and creamy texture, and a fruity, brothy flavour.
