Science of Artisan Cheese

Neal’s Yard Dairy’s biennial Science of Artisan Cheese Conference is coming up on 14-15 August, 2018. Every two years, over one hundred cheese makers, scientists, and members of the cheese industry gather at North Cadbury Court—home of Montgomery’s Cheddar—in Somerset for two days of presentations on topics related to artisan cheese. Since the first conference in 2012, the event has provided a clearing house for practical and technical information. Just as importantly, it provides a chance to meet others within the industry from around the world and spend two days making connections and exploring new ideas.


Topics for this year include the latest microbiome research linking farming practices to milk and cheese profiles, techniques for decreasing the need for antibiotic use on farms, the effect of feed on milk composition and fatty acid profiles, and trials for isolating raw milk microbes to use as adjunct cultures on cheese.
