This Month's Cheeses

The Neal’s Yard Dairy Subscription showcases three different cheeses each month, connected in some way by a location, season, recipe or occasion. This March the selection takes inspiration from St Patrick’s Day, an opportunity to celebrate some of the excellent Irish cheeses available. An ideal combination of a soft cheese, a blue cheese and hard cheese, this iteration offers inspiration beyond a simple cheeseboard - you can find some ideas on the Neal’s Yard Dairy Subscription Hub. Some Neal’s Yard Dairy employees have been known to sandwich Durrus in a flaky croissant, with lashings of butter and salt and vinegar crisps... Cashel Blue

An easy-eating blue cheese with a pleasantly buttery texture and a balanced amount of blue veining which adds a lift to the rich, full-flavoured paste.

Durrus

A smooth, soft washed-rind cheese with flavours that are milky and buttery. Its mouth-coating texture and gentle flavours make it an easy-eating cheese.

Coolea

The flavours of Coolea are sweet and rich, with hints of caramel, butterscotch and honey. Smooth and close textured, it is reminiscent of Dutch Gouda.

The cheese we work with is strongly founded in a sense of community, from cheesemakers sharing recipes and tips, to the shared efforts of maturation between cheesemaker and affineur, to the departments within Neal's Yard Dairy tasting and talking about cheese together on a daily basis.
