This Month's Cheeses
The Neal’s Yard Dairy Subscription showcases three different cheeses each month, connected in some way by a location, season, recipe or occasion. It’s the shortest month of the year and it can be easy to let February pass by, but snowdrops and crocuses are creeping through the cold ground and reminding us that spring is on the way. To celebrate the end of the season, we have a few treats for this month’s selection: a trio of cow’s milk cheese demonstrating how varied this simple ingredient can be. First, we have the last of the season of our Stonebeck Wensleydale as an exclusive for our subscription customers. This cheese is a favourite of ours, and we love seeing how it changes across the months. It won’t be back until late Spring/ early Summer so savour it while it lasts. Templegall is one of our newest offerings and is an Alpine-style cheese made in County Cork, Ireland. It is only made using milk from the summer months, and has a rich golden paste and umami flavour. It’s extremely moreish. Lastly we have a strong and boozy Cheddar cheese called Isle of Mull. We have a short film of their story, which may make you want to pack up everything and move to an island in the North Atlantic! By savouring this cheeseboard, you are helping to support the makers of British and Irish cheese, preserving time-honoured cheesemaking traditions and fostering exciting new ones, too.
