About Cocoa Runners

Cocoa Runners run around the world searching for exceptional single estate craft chocolate bars, crafted in small batches using simple, quality ingredients. Just as with cheese and its milk, and wine and its grapes, the key to great chocolate starts with amazing beans - and all too require a knack for craft. Cocoa Runners will go under the hood of craft chocolate bars, looking in detail at the intricacies of cacao genetics, harvest, fermentation, vintages, conching and roasting, and examining how each stage of cacao production can affect the flavour of a bar.
