Unlike her other cheeses, the production of which can be made by other members of her team, Mary Holbrook likes to make each batch of Old Ford herself.
Our work with this cheese
Old Ford is made when the seasonal milk production peaks, usually between May and July. The cheeses arrive with us a few months later and are turned once a week until they are sold.
This short 'farm-visit' film features cheesemaker Mary Holbrook at her farm near Bath in Somerset. Mary has her own herd of around a hundred home-bred goats, or 'the league of nations' as she calls them. As we follow her around the farm, the true depth of her knowledge and experience reveals itself. We hope you enjoy watching it.
