Spa Blue is a result of maturing experiments we have been running with Devon Blue. This cheese tends to be drier than the Devon with more breakdown under the rind.

Our work with this cheese
To turn Devon Blue into Spa Blue, we mature it on shelves in our maturing rooms as opposed to keeping it wrapped and in the fridge as we do the Devon Blue. Spa Blue is matured for about 10 weeks, and in this time we allow a natural rind to form which imparts a breakdown and a creamier texture and mushroomy flavours.
