Leitrim, Co Leitrim.

Leitrim Hill Creamery won Supreme Champion at the 2026 CAIS Ireland Cheese Awards.

Aghaslane (pronounced ‘Ah-hass-lawn’) is made by Leitrim Hill Creamery, a small goat farm and creamery in County Leitrim, run by Lisa
Gifford together with her daughter Gypsy Gifford and Richelle South.
Lisa moved to Leitrim in 2016, fulfilling a long-held ambition to become
a cheesemaker. The creamery uses a continuous whey starter method,
similar to a sourdough mother, inoculating each new batch with whey
from the one before rather than adding commercial cultures, letting the
raw milk’s natural microflora shape its flavour.

We were introduced to Gypsy and Richelle through our friend Amiee Lawn, who used to make the Innes goat’s cheeses in Staffordshire with her husband
Joe Bennett before they relocated to Ireland in 2021. She taught them to use whey starters, and we’re excited to import these cheeses and collaborate
with this promising new cheesemaker.
