We’ve worked with Joan Cross for decades and have been selling her cheese since the early days of Neal’s Yard Dairy. We are sad to say that after a cheesemaking career that spanned more than 60 years, Joan is now embarking on a well deserved retirement. This also sadly means that Cotherstone is no longer in production and we have now sold our final cheeses. 

 

Cotherstone is a varied cheese that can range from fresh, flaky and acidic to smooth and custardy. This variation can be seen in its rind too which can be orange and sticky or pale fluffy grey.

Cotherstone is a cheese that has long been a part of the Neal's Yard Dairy line up, and has been made by Joan Cross for more than 30 years, using a family recipe. It’s a dales-style cheese, like Wensleydale or Swaledale, which would have been made for centuries on smallholdings in the Yorkshire Dales. Joan is one of a very few remaining small producers who has been making continuously for a long time. The cheese was made with raw milk from the Cross family herd until the mid-1990s and is now bought in from local sources and pasteurised. Cotherstone is a rare and characterful cheese, which can vary batch to batch.

Cotherstone is salted the day after its arrival at the Arches to draw out excess moisture and to help form a firmer rind. It is then kept in one of the colder maturing rooms and turned several times a week for a month. Once the rind has the desired condition it is wrapped and put into the cold room to stabilise and break down further in texture and deepen its flavour.

I first came across this cheese over 35 years ago via Patrick Rance's Cheese guide. Neals yard is one of the only places that lets it mature and it is sublime!!!
