A soft and tender cheese with a fine, delicate rind, this cow’s milk cousin to Brefu Bach delivers milky depth, subtle sour-cream richness and a clean, buttery tang.

Minimum weight - 90g.

Wild moulds- spots of blue, green and grey moulds - often develop on the surface during maturation. They are perfectly safe to eat and do not negatively affect the flavour of the cheese.

This is a new cheese to our slate, and we are excited to see how it develops.

The name of Brefu Da plays on the double meaning of 'Da' in Welsh as both good and cattle/livestock

Cheesemaker Carrie Rimes is well known for her acclaimed sheep's milk cheese Brefu Bach and Brefu Da is her new cow's milk soft cheese. The milk comes from nearby Pentrefelin, a mixed, pasture-based farm run by Huw Foulkes, a third generation farmer. Like the sheep's milk Carrie uses, Pentrefelin was carefully selected and it is its high quality milk that helps to produce such an outstanding cheese. Huw farms in a way that prioritises animal welfare, soil health, and the creation of real, nourishing food for the local community.

We have provided continual feedback throughout the development of Brefu Da and are excited to see how this cheese develops.
