Mario Olianas devised Chevin (pronounced ‘Chay-vin’) Goat as a way of diversifying the offerings of his small dairy and reducing his reliance on a highly seasonal supply of sheep’s milk.

The milk for Chevin comes from two small goat dairies, Meaburn Hall Goats in the Westmoreland Dales and Yellison Goats in West Yorkshire. Mario buys milk from each farm on alternating weeks. He aims to sell them at an age of around two months, when they are still delicate and gently aromatic, and is aiming for a style that ‘is not too funky or caramel-sweet or acidic'
