A well-balanced cheeseboard for Easter comprising four carefully selected British and Irish cheeses.
Appleby's Cheshire
milk type
Cow
ingredients
Raw Cow's MILK, Salt, Annatto, Cheese Cultures, Animal Rennet
coagulant
Animal Rennet
A well-balanced raw milk cheese boasting rich mineral flavours upfront, a juicy acidity and the succulent yet crumbly texture that is so characteristic of a classic Cheshire.
Karst
milk type
Goat
ingredients
Raw Goat's MILK, Salt, Cheese Cultures, Animal Rennet, Vegetable Ash
coagulant
Animal Rennet
Karst is delicate and creamy, with fresh and lemony notes. It is the sister cheese to St Tola and shares a similar flavour profile.
This cheese intentionally has a thin mould rind. Because of this, wild moulds- spots of blue, green and grey moulds, may develop on the surface during maturation. They are perfectly safe to eat and do not negatively affect the flavour of the cheese.
Minimum weight - 150g.
Little Rollright
milk type
Cow
ingredients
Pasteurised Cow's MILK, Salt, Cheese Cultures, Animal Rennet
coagulant
Animal Rennet
A washed-rind cow's milk cheese wrapped in a band of spruce bark, its texture is soft and glossy and the flavour milky with woody notes.
Minimum weight - 250g.
Stichelton
milk type
Cow
ingredients
Raw Cow's MILK, Salt, Cheese Cultures, Animal Rennet, Penicillium roqueforti
coagulant
Animal Rennet
A pronounced juicy acidity and toasty, biscuity notes are the hallmarks of Stichelton, though the range of flavours this characterful raw milk blue can exhibit is extraordinary: from crisp green apple right through to brothy umami.
