Nettus is a Suffolk word that literally means 'neat house' but is commonly used for a small livestock shed on a farm. Broughton Hall Farm has a ‘nettus’ where the family’s pet chickens reside.
Emily and her husband Sam are arable farmers based in Suffolk who are interested in diversifying the output of their farm and ultimately including animals within their system. Their development of a cheese is a first step in this direction. In the meantime, they are working closely with their friends who own a small flock of sheep nearby, as well as a larger herd in Buckinghamshire that also supplies milk to other cheesemakers.
While the lactic log Pyghtle is the signature soft cheese, Emily has also been busy developing a hard cheese to help utilise excess milk during the summer and produce a cheese that can be sold into the autumn and winter. As of Autumn 2024, Nettus is one of our newest cheeses, and we are providing feedback to Emily to help her refine the method and coax the best flavours from the milk.
