Made from pecorino grapes, hand harvested in small baskets by spontaneous fermentation with no temperature control in concrete tanks. The wine then has 7 months in concrete on the lees with no fining and no filtration. Stefano and Eloisa took over the De Fermo estate in 2009 and immediately began converting it to biodynamics for which they are now certified.
