Pecorino Fresco is a Yorkshire take on a Sardinian staple: a delicate, milky sheep’s milk cheese that is kept just a few weeks before it’s ready to enjoy.
Mario Olianas, who comes from a Sardinian family whose background was in the fishing industry, moved to Yorkshire in 2001 where he met his partner Sonia. Working in baking and catering over the years, Mario turned to cheesemaking in 2018, riffing on the classic styles of his native island and relying on feedback both from his local community of customers and his extended Sardinian family.The business remains a small family affair, and it sources its milk from a herd of sheep based near the dairy in Otley, Yorkshire.
Our team first visited Mario and Sonia in early 2024, selecting a batch of Pecorino Fresco and several samples of a harder sheep’s cheese for experimental trials at our Maturation Facilities in Bermondsey. We visit the dairy on our frequent farm visits, when we taste and select the batches that we go on to sell.
