Shropshire Blue is made by Billy Kevan and his team in Nottinghamshire using traditional animal rennet exclusively for Neal's Yard Dairy
Shropshire Blue is like a Stilton with annatto colouring to make it orange. The Neal's Yard Dairy Shropshire Blue uses animal rennet and is pierced fewer times than the standard profile of Shropshire Blue, resulting in more complex flavours and less intense blueing.
We visit Billy Kevan several times a year. He makes a special recipe of Shropshire Blue for us. It is mainly a cheese which we export, but we opened up domestic sales recently as customers have expressed their interest in the cheese and more has become available to us. We continue to focus on the Colston Bassett Stilton on our retail counters as we feel it is the truest expression of this classic style.
Out gift was exceptional as always. The cheeses are incredible and always go down well. Arrived in perfect condition and on time.

I've been introducing my Dutch husband to British blue cheeses, and this is his all time favourite, as creamy consistency with a good depth of flavour, that goes well with a glass of full bodied red wine..
