Devon Blue is one of three cheeses made by Ben Harris and his team at Ticklemore Dairy in Devon.
Our work with this cheese
The original cheesemaker, Robin Congdon, initially developed a sheep’s milk, Roquefort inspired cheese, Beenleigh Blue. Then came Devon Blue, a cow’s milk blue cheese, which could be made year round when sheep's milk is in short supply. We visit Ticklemore Dairy twice a year to taste and select batches with cheesemaker Ben Harris. He also visits us with his cheese a few times every year. This dialogue is really essential as the cheese is matured on the farm. The Devon Blue arrives with us in London ready to sell, although the younger cheeses we receive stay on with us a further 10 weeks to become Spa Blue: a cheese with completely different characteristics, and a testament to the power of maturation.
