More about Tom's production process:
Tom created the cheese boards from pine shelves formerly used to mature cheese at the Colston Bassett dairy. Each maturing board is cut in half to make two cheese boards, each of which is then planed and sanded. Tom used a router to cut the finger on the bottom edge, and knock the sharp edges off. Finally he branded the boards with the Neal's Yard Dairy logo using a branding iron, and oiled the boards with food safe, environmentally-friendly Tung oil.
