This Month's Cheeses

The Neal’s Yard Dairy Subscription showcases three different cheeses each month, connected in some way by a location, season, recipe or occasion. As autumn begins, and we start to look towards Christmas, let’s take a pause and appreciate this magical season. As the leaves change, our parks and countryside become a riot of colour, birds start their migrations, to be replaced by their friends from the north and there are conkers, everywhere. This month's selection are a comforting bunch, great to be enjoyed round the table with friends or when crunching through leaves. The creamy, cocoa-y Karst is a delicious way to finish a meal or have a hunk of the Whin Yeats Wensleydale with some hot apple pie, and with its whisky notes the Isle of Mull cheddar can warm up the coldest of evenings. And last but not least, by savouring this cheeseboard, you are helping to support the makers of British and Irish cheese, preserving time-honoured cheesemaking traditions and fostering exciting new ones too. Karst is delicate and creamy, with fresh and lemony notes. It is the sister cheese to St Tola and shares a similar flavour profile. 

This cheese intentionally has a thin mould rind. Because of this, wild moulds- spots of blue, green and grey moulds, may develop on the surface during maturation. They are perfectly safe to eat and do not negatively affect the flavour of the cheese. 

Minimum: 150g.
